Straw yellow, showing tropical fruit characters of passionfruit, pineapple & guava, indicative of the variety and some lemony notes adding to the overall complexity of the wine. It has a crisp dry finish and is suited to Asian seafood dishes
The Story
This wine is made from 100% Sauvignon Blanc grapes from vines grown on this individual estate.
The vines have an average age of twelve years.
The fruit was picked and fermented in two batches to help add complexity to this wine.
Both viticultural and winemaking practices are organic.
There has been no filtration carried out on this wine. It was allowed to settle naturally, using the time honoured method of gravity to clarify the wine. Due to this a small amount of protein may appear in the occasional bottle. This is totally harmless.
The wine has been made in a European style, and as such will benefit from being allowed to stand for a little while. It will be at its best if not served too cold, as this will allow the fruit characters to stand out.
