Tasting Notes

Pale yellow-green in the glass. Aromas run from citrus blossom and florals through to nectarine and stone fruit, with minerally, chalky notes underneath. On the palate it’s all about energy: a lemon-lime “attack”, mouth-watering acidity and a lingering finish that feels saline and finely textured, with gentle herbaceous tones.

Winemaking

Parcels were picked separately from the Stone Well and Gnadenfrei vineyards and immediately pressed to tank. Fermentation was slow and cool to retain delicate aromatics, then the final blend was composed once fermentations were complete. Savagnin makes up the mineral backbone (89%), with Albariño (6%) adding brightness and Grenache Blanc (5%) bringing a touch of tropical ripeness and texture. The blend spent five months on lees in tank before filtering and bottling.

Vineyard & Vintage

Fruit comes from two Barossa sites selected for freshness and perfume. In 2023, the aim was to capture bright primary fruit while keeping a tight, mineral line—hence the early picking and cool ferments. The result is a white that drinks summery and lifted, but with enough chalky grip and savoury length to work at the table.
