The fruit for this wine is grown in Temple Bruer’s certified Organic Vineyards in Langhorne Creek and Eden Valley. Only in some years when the weather and climate is right can we make our Pure White Cuvee . Cool temperatures and low disease pressure is key in these years.
Chenin Blanc and Viognier were picked early to allow a delicate freshness and acidity. Gentle pressing removed the juice from the skins with minimal phenolic pick up, cold settling and fermentation in stainless steel allowed the true flavours of the fruit to be captured and retained. Secondary fermentation in bottle was conducted resulting in a fi ne bead and complimenting the delicate structure and complexity of the base wine. This wine was matured on yeast lees for three years, which provides structure and biscuit characters. The wine was then blended with a younger vintage base wine to provide a fresh, crisp and complex finish.
COLOUR Pale straw.
AROMA This unique blend fills the nose with lifted citrus scents and is balanced with biscuit and bakery aromas from extended yeast contact.
FLAVOUR Lemon and mineral with hints of sea spray carried by delicate bubbles.
