Tasting Notes

The aromatics are bright and playful: redcurrants, pomegranate seeds, blueberry floss and dried blood orange, with a subtle musky confection note and a faint herbal lift from whole bunches. On the palate it is light, fresh and electric, walking that lovely line between slippery and crunchy. There’s enough powdery tannin to give it shape, but the real appeal is the juicy, chillable energy and how cleanly it finishes.

Winemaking

This is made in a modern, Beaujolais-style vein, using part nouveau-style whole-bunch carbonic maceration and part saignée fermented in oak. The blend combines early-picked Shiraz, Grenache, Mataro and Graciano, which helps build freshness, spice and drinkability rather than weight. The aim is very clear: preserve bright fruit, keep the tannins soft, and make a red that is happiest with a light chill and good company.

Vineyard & Vintage

The fruit comes from Paxton’s certified biodynamic, estate vineyards in McLaren Vale, where healthy soils and chemical-free farming support the biodiversity that inspired the Queen of the Hive label. The 2024 growing season at the winery was marked by a wet, cool start followed by intense summer heat, then a kinder late season that allowed the remaining fruit to develop flavour while keeping natural acidity. That freshness is exactly what gives this wine its vivid, crunchy shape.

Why We Love It

This is one of those bottles that knows exactly what it wants to be and absolutely delivers. It is bright, chillable and unpretentious, but still has enough aromatic detail and savoury edge to keep it interesting. If you want a red for warm weather, pizza, park hangs or a slightly cool pour on a weeknight, it is very easy to say yes to.

Food Pairing

The light body and crunchy acidity make this brilliantly flexible with food, especially dishes that are snacky, salty, charred or a little tomato-driven. It also shines with picnic-style vegetarian food and anything you would happily eat slightly outdoorsy with friends.

Mood or occasion to match this wine…

Made for park blankets, beach snacks, backyard dinners and any night when serving red straight from the fridge feels like the right decision. It is playful, but still polished enough to pour for friends who care what is in the glass.

Cellaring

This is a drink-now style and best enjoyed for its youthful fruit and freshness. Organic Wine suggests drinking now to February 2026, which feels exactly right for a wine built on energy rather than age.

Producer

Paxton is one of McLaren Vale’s best-known biodynamic producers, founded by viticulturist David Paxton in 1979 and still deeply committed to farming first. The family’s estate vineyards are certified organic and biodynamic, with a long-term focus on soil health, biodiversity and genuine resilience in the vineyard. That matters here because the Queen of the Hive range is not just a playful label idea — it connects directly to the bee life supported by Paxton’s chemical-free vineyards. In this light red, Paxton channels that farming philosophy into a wine that feels vibrant, alive and very much of its place, but with a lighter, more relaxed touch.

FAQ

What does Queen of the Hive Light Red taste like?

It tastes of redcurrant, pomegranate, blueberry floss and dried blood orange, with a little musky lift and gentle herbal detail. The palate is light-bodied, dry and crunchy, with soft powdery tannins and a very easy, chilled-red personality.

Is this wine dry or sweet?

It is definitely dry. Organic Wine lists the residual sugar at around 2 g/L, so while the fruit feels juicy and bright, the finish stays firmly dry.

What is the body and tannin level like?

This is a light-bodied red with just a little tannin dusting rather than anything firm or chewy. The structure is there to keep it food-friendly, but the style is all about freshness and drinkability.

Does this wine contain preservatives or sulphites?

It is listed by Organic Wine as a No Added Preservative wine, which means no sulphur dioxide or other preservatives were added during winemaking. Like all wine, it can still contain tiny naturally occurring sulphites created during fermentation.

Is Queen of the Hive Light Red organic, biodynamic and vegan?

Yes. Organic Wine lists it as certified organic, certified biodynamic, vegan suitable and no added preservative, which makes it a very strong fit for drinkers looking for a lower-intervention red.

Should I chill this wine?

Yes — absolutely. Paxton specifically notes that it can be enjoyed chilled, and serving it slightly cool, around 12–14°C, really suits the wine’s crunchy acidity and juicy fruit.

Can I cellar it?

Not for long. This is built to drink young and bright, with Organic Wine suggesting a drinking window through February 2026 rather than long-term ageing.

What food works best with it?

Think snacky, salty, tomatoey and share-plate friendly: flatbreads, sausage rolls, charcuterie, grilled mushrooms or pork dishes all work beautifully. It is also very good with picnic-style vegetarian food because the tannins stay soft.

Who will love this wine most?

This is ideal for drinkers who like lighter reds, chilled reds or juicy natural-leaning styles that are easy to enjoy. If you love the idea of Beaujolais-style energy but want an Australian expression, this is a very smart bottle.

How long will it last once opened?

Because it is no added preservative, it is best within 1–2 days of opening, recorked and stored in the fridge. The wine is at its brightest and most fun while that red-fruit lift is still vivid.
