Biodynamically grown and wild-fermented. While only medium-bodied, it has remarkable intensity and complex texture. Bright nose of red fruits, some aniseed spice and a waft of French oak. Concentrated red & black fruit on the palate, with warm spice, some chocolate and a savoury edge. The tannins are silky and fine on the finish. Yum.

Paxton Quandong Farm Shiraz 2016 - Tasting Notes from the Winery

Quandong Farm Shiraz is a single vineyard wine that aims to highlight the intensity and brightness of fruit grown using biodynamic techniques. Our farming practices are designed to produce wines of intensity, but also with layers of texture, flavour and interest for the consumer. We think this wine exhibits these characteristics and provides both concentration and flavour and a certain delicacy, rather than simple raw power.

COLOUR: Deep red with a vibrant purple hue

AROMA: Bright lifted red berry fruits, with a distinctive whole bunch perfume, licorice and a touch of French oak

PALATE: Medium bodied, this wine displays concentrated fruit and a delicate balance of French oak and silky tannins

CELLARING: This wine can be enjoyed young, however, careful cellaring for 5–20 years will be rewarded

VINTAGE: 2016 was a very strong year in McLaren Vale. After 6 months without rain, we had 40mm in the first week of February. This slowed down the baumes and allowed the acidity to catch up, therefore giving the fruit fantastic flavour equilibrium. Berry numbers were high due to an even veraison, which lead to the highest quality crops and tonnages this millennium.

VINIFICATION: The grapes were hand picked and selector harvested at optimum flavour and sugar equilibrium. 40% of the harvest was used as whole bunches while the remainder was delicately destemmed over the top of the whole bunches. The ferment was 100% wild/ natural yeast spontaneous fermentation. The small batch ferments were carefully plunged and pumped over for 14 days to extract colour, flavour and tannin structure. The ferments were pressed to new and mature French oak barriques, where they were nurtured for 12 months prior to blending and bottling.
