Tasting Notes for Organic Hill Founders Preservative Free Cabernet Sauvignon 2022 from the Winery

This super-premium organic wine is made specifically without added preservatives and is vegan friendly. It is driven by organic passion and ‘raison d’etre’. With its black core and brick red rim, this wine is bursting with aromas of red fruits, blackcurrants, chocolate, spice and subtle, classic Cabernet tobacco notes. The palate is fresh and lively, with spice, blackcurrants and hallmark Cabernet characters. Approachable, fine tannins, subtle acidity and good length provide a focussed finish.

Winemaking

The Cabernet grapes were harvested from our organic and biodynamic vineyard, in the premium McLaren Vale region of South Australia. Fermented in an open top fermenter at approximately 78.8°F using the CLOS yeast, this wine was ‘on skins’ for 10 days. The juice was pumped over skins twice daily for optimum extraction of flavor, tannins and color before being pressed. The wine was bottled early without finings or sulfur dioxide additions, to retain its freshness, vibrancy and remain free of added preservatives.

Drinking now or cellar until 2028.
