Pale yellow and clear in appearance, sour apple, hawthorn and white flowers on the nose with a fresh and well-balanced palate.
The Story
Grown on mainly chalky-clay soils the grapes are harvested at the height of maturity. As soon as they arrive in the cellars, the grapes are pressed and the must is cold racked for 24 hours. The fermentation temperatures are regulated at 18-20°. The wine is ages in vats, without malo-lactic fermentation. It is bottled at the end of the winter, depending on the harvest.
