Kalleske Merchant Cabernet Sauvignon: Tasting Notes
WINE STYLE → Cedar, Cigar Box & Classic
A medium-full Barossa Cabernet with classic structure, savoury detail and a clear varietal line. Cherry, violet, baking spice, black olive, cedar, tobacco and a hint of tomato lead the aromatics, giving it an unmistakably Cabernet profile. The palate is alive with juicy red and blue fruits, while extremely fine tannins provide a neat backbone and subtle French oak adds depth rather than weight. It is expressive, balanced and long, with enough restraint to keep the Barossa richness in check.

Tasting Notes
Merchant Cabernet 2023 opens slowly, then reveals cherry, violet, baking spice, black olive, rusty steel, cedar, tobacco and a hint of tomato. The palate is medium-full bodied and alive with juicy red and blue fruits. Tannins are prominent but extremely fine grained, giving the wine a neat structural backbone rather than hardness. Balanced acidity supports the fruit line, and subtle oak adds further depth without taking over. It finishes expressive and long, with good shape and restraint.
Winemaking
The grapes were picked over a week on April 28 and May 3, then destemmed into an open-top fermenter. The must fermented for 12 days on skins with hand pump-overs twice daily. After pressing, the Cabernet was transferred to a mix of one-third new and the balance seasoned French oak hogsheads, where it underwent natural malolactic fermentation. The wine then matured in barrel for a year before bottling.
Vineyard & Vintage
Merchant Cabernet Sauvignon is sourced from a single vineyard planted on the Kalleske property at the end of last century. The hand-pruned vines are low yielding and grown in shallow sandy loam over deep red clay, a strong match for varietal Cabernet with structure and concentration. The 2023 season was the longest and latest on record at Kalleske, beginning with a wet, cool spring that built solid sub-soil moisture before a generally dry growing season. Mild days and cool nights through autumn allowed slow, steady ripening and excellent fruit quality.
Why We Love It
This is a very solid example of Barossa Cabernet that stays true to the variety. It has the dark fruit, cedar and tobacco notes you want, but the tannins are especially fine and the oak is measured. For drinkers who like Cabernet with structure and detail rather than excess ripeness, it is a strong fit.
Food Pairing
This style works well with roast and grilled meats, herb-led dishes and richer vegetarian plates built around mushrooms or lentils. The tannin and savoury edge make it especially useful with protein and dishes that carry some earthiness or char. Try matching this wine with →

Mood or occasion to match this wine…
A good choice for roast dinners, cooler evenings and occasions where a structured red with a more classic profile makes more sense than a broader, richer Shiraz.
Cellaring
The winery notes that Merchant can be enjoyed now or in a decade. It already drinks well with a short decant, but it has the tannin, fruit weight and balance to develop further over the medium term.
Producer
Kalleske is a seventh-generation family estate based at Greenock in the north-western Barossa Valley, with the family farming there continuously since 1853. The vineyards are certified organic and biodynamic, and all fruit is estate grown. Merchant has an especially personal connection within the range, tied to Kym John Kalleske, who farms the diverse family property and continues the family tradition of merchant and miller established by Johann Georg Kalleske after his arrival from Prussia in 1838. The wine is hand pruned and harvested, wild fermented and matured in French oak, reflecting Kalleske’s practical, traditional approach to site-driven winemaking.

FAQ
What does Kalleske Merchant Cabernet Sauvignon taste like?
It shows cherry, violet, baking spice, black olive, cedar, tobacco and a hint of tomato, with juicy red and blue fruit through the palate. It is medium-full bodied, structured and long, with very fine tannins and subtle oak.
Is this wine dry?
Yes, it is a dry red wine. The fruit is bright and expressive, but the finish stays firmly dry and structured.
How full-bodied is it?
This sits in the medium-full bodied range. It has clear Cabernet structure and concentration, but it is not as broad or weighty as the estate’s bigger Shiraz releases.
Does it need decanting?
A short decant helps. Around 20 to 30 minutes is enough to open the aromatics and let the cedar, spice and fruit settle together.
What temperature and glassware work best?
Serve it at around 16–18°C in a large red wine glass. That gives the wine room to open and softens the tannin profile slightly.
Can this wine be cellared?
Yes. The winery notes it can be enjoyed now or in a decade, and that fits the wine’s fruit weight, fine-grained tannin and oak structure.
Does this wine contain preservatives or sulphites?
It is not a No Added Preservative wine, so it does contain sulphites. Some occur naturally during fermentation, and certified organic and biodynamic wines are made under lower permitted sulphite levels than conventional wines.
Is this wine vegan friendly?
Yes, it is listed as vegan suitable. It is also certified organic and certified biodynamic.
What food works best with this wine?
It suits roast beef, lamb, mushroom dishes and hearty vegetarian mains with herbs or earthy flavours. Protein and savoury depth are the best match for its tannin and Cabernet structure.
Who is this wine likely to suit?
It will suit drinkers who enjoy Cabernet Sauvignon with classic varietal detail, fine tannins and restrained oak. If you like structured Australian Cabernet with some regional warmth but still want freshness and definition, this is a good fit.
