Those buttery cashew nut and marzipan characters combine with figgy fruit flavours and a creamy palate to yield a wine of considerable difference. The Story

"This is the fourth PF White that we have made and we have learnt some new tricks that must unfortunately remain confidential. Making wine without the use of sulphur dioxide is really frontier stuff and it is for the brave, the foolhardy ……. and the careful. We tipped the rules on their head with this one with the help of Christian Hansen who are providers of yeast and bacteria to the industry. However, we can let you know that for the first time wood is playing a part in the elaboration of the wine with a small part fermented in barrel ( French Oak ) and the tank fermented portion benefiting from contact with some toasted ‘nuggets’ of French and American oak. Secondly we can say that we have returned to the formula adopted for the first PF White that we made the 99 which was entirely made from Chardonnay from our vineyard in Karridale rather than the Chardonnay Semillon blend of the 2000."
