A south of France colour, with aromas full of strawberry, pink rose petal, spicy bergamot, and Anzac biscuits baking. They follow on the palate with red fruited acidity and spice including redcurrant, rosehip tea, white pepper, and savoury leather.
Unfined and bottled without any sulfite preservatives, this wine is organic, vegan friendly, and preservative free.
Tasting Notes for Rosnay Freedom Preservative Free Rose 2023 from the Winery
The Freedom Rose is made from shiraz vines which have been grown organically and biodynamically since they were planted in 1997. The grapes are harvested on the early side for lighter body and more acidity, pressed quickly for a vibrant salmon colour, and bottled without any added sulfites since 2014.
The grapes are early harvested when still a bit green, and gently pressed to maximise their natural acidity and flavours. They are then traditionally cold settled, racked, and fermented slowly at low temperature (15-17degrees C). Since 2022 we have fermented this using wild yeast.
Unlike most Australian, sulfited rose, we allow the wine to go through malolactic fermentation, because its a natural fermentation that may occur in the bottle if no sulfites are added. The result is a more “old world” style with a creamy acidity, rosehip notes and a long nutty finish, rather than a hard acid line of “new world” rose.
Once opened, finish it within a day or two at most.
