Tasting Notes for Organic Sakura Chardonnay 2023 from the Winery
Nose: Aromas of white peach, figs, and grilled almonds are complemented by seasoned oak spice and flinty minerality.
Palate: The Sakura Chardonnay is a flavourful and complex wine. The palate is textural and refreshing, with white fig and white peach flavours emerging alongside toasty French oak and yeast complexities.
Food Pairing: Crispy skinned barramundi and swordfish with a heavy cracked black pepper buttery mash.
Vintage Notes: The 2023 growing season was favourable for Chardonnay, benefiting from ample winter and spring rain. The vine canopy provided good fruit shading, minimising sun exposure and bitterness while increasing disease pressure. The vineyard team’s constant monitoring and maintenance ensured quality and yield were preserved.
