Vibrant young red very dark in colour, richly textured with aromas of blood plums, star anise and a spicy full palate with fine tannins which are another form of protection. Background, Vintage and Winemaker Notes:
Vintage: Extreme dry throughout the growing season with 1/3 normal crop. Grapes were ripe early February 1 month early and escaped the summer rain thankfully.
Vinifcation: Cold fermented at 15 Centigrade with a neutral yeast, pressed early then stored cold at 10 Centigrade until early bottling in May. This process retains some natural CO2 and prevents oxidation, the only way to manage the quality in this wine.
