This wine displays classic minty Cabernet notes, with hints of red berries, spice and cigar-box. The palate is long and firm, yet supple, with ‘sweet’ fruit flavours evident. Try it with duck, game or other full-flavoured dishes.

 

 

The Story

VITICULTURE & WINEMAKING:
All the fruit was organically grown in the Temple Bruer vineyard and is certified as A-grade organic.The grapes were hand-picked at an average of 13.7° Be` on 3rd April, 2001.

After crushing, the must was fermented in open fermenters before being pressed at approximately 0.9° Be`. All the pressings were included with the free-run wine. The wine was inoculated for malolactic fermentation and then transferred to new French oak stackvats, where it spent approximately 12 months. The wine was bottled during February 2003.
