The wine is deep purple in colour. Stewed plum fruit characters follow luscious cherry and blackberry on the nose. Soft vanilla, spicy cinnamon and black pepper notes enhance this. The wine is big and full, with sweet and rich notes on the mid palate extending to soft supple tannins on the long finish. These excellent fruit characters are enhanced by integrated oak, with just a touch of the earthy ‘wet clay’ regional characters associated with big Langhorne Creek reds.

 

 

The Story

All the fruit was sourced from the Temple Bruer vineyard, which is certified organic. The grapes were hand and machine picked during March 2003.

After crushing, the must was fermented in open fermenters, at a temperature range of 20 – 24 deg. C. The ferments were pumped over for 30 minutes twice daily. The wine was pressed at 2.0 to 3.0 deg. Baume and all the pressings were included with the free-run wine. Following fermentation, the wine was racked, underwent Malolactic Fermentation and matured in wood for several years. Bottling commenced in February 2006.
