The Story

Soil: Scree (talus) on clay based sand at the foot of the Luberon mountain range.
Harvesting: Grapes are harvested at maturity.
Vinification: After pressing, the must is cold-settled for 24 hours. Then, fermentation is performed for 3 weeks, between 14 to 18°C, to develop flavors.
Maturing: The wine is aged on fine lees in vats without malolactic fermentation.

'...M.Chapoutier is the maker of "my wines". I get to say things like that now. Quite simple, these are two of most enjoyable wines I've put in my gob all year...] It has a lovely perfume, it's juicy with a suggestion of apricot and baked apple but it's not too forward. It has a nice acidity, and will match a host of different foods.'. » Ben Knight, Melbourne Weekly
