With an intense deep red-Black berry colour the aroma is complex with ripe red berry fruit and classic cassis with a slight mint overtone. The mouth shows a very round structure, very soft well integrated tannins with fruit aromas showing through. A Cool climate complex Cabernet Sauvignon exhibiting Classic Australian characteristics, but made to traditional French techniques. Very elegant and velvety style expressing the "Terroir" at its best.

 

 

The Story

Grapes are destalked and vinified in open concrete vats. Vatting (fermentation and maceration) lasts between three weeks and one month. After pressing, the wine is put into French barriques for 10-12 months aging. Natural Malo-lactic fermentation occurs in Barrel. The percentage of new wood does not exceed 15 % in order to encourage the fruit aromas and characteristics of the wine develop fully.
