The fruit is from dry-grown, low cropped, old vine Shiraz. Ripe and rich in flavour, open in texture, gloriously stacked with white pepper and spice (reflection of a cooler year), slightly earthy black cherry and with some aniseed character that lasts on the firm but velvety finish.
The Story
The fruit is from low yielding (1.0 tonne/acre), dry and organically grown from vines planted in the forties and fifties in deep gray loam soils of the Heathcote area. The wine was fermented with its indigenous (natural) yeasts, barrel fermented and matured in new and used French oak for eighteen months.
